Red Fish Soup Recipe

Fish & Men is an award winning 2020 documentary that exposes the high cost of cheap fish in the modern seafood economy. The movie educates on the forces threatening local fishing communities and public health by revealing how our choices as consumers drives the global seafood trade. In the film, Fishing Partnership’s Angela Sanfilippo speaks about her experiences as a daughter, wife, mother and sister of fishermen, what it’s like to come from a 7th generation fishing family living and working in Gloucester, and serves her family’s recipe for Red Fish Soup. For your enjoyment, here is Angela’s family recipe for Red Fish Soup:

THE SANFILIPPO’S RED FISH SOUP

2 pounds red fish fillets, cut into pieces
1 cup chopped onion
1/2 cup chopped carrots
1 cup chopped celery
1 8-ounce can kitchen ready tomato sauce
1/3 cup olive oil
1 teaspoon salt
½ teaspoon pepper
2 teaspoons chopped fresh parsley
2 cups of water

In a sauce pan, using moderate heat, sauté onion, carrots and celery in oil until softened and crispy. Add tomato sauce and cook for an additional two minutes, stirring constantly.  Add 2 cups of water, salt, pepper and parsley.  Stir, and bring to boil.  If too thick, add more water, once it starts boiling, lower heat and let it cook for ten minutes. Then add the red fish, stir and bring to a boil.   Once it starts to boil, lower the heat and cook for 15 minutes.  Serve with hard bread, crackers and over white rice and add grated Romano cheese.
